Done in just 5 minutes it’s perfect next to any type of seafood dish and a must-have side for paella. For years, I was so scared of making mayonnaise and mayonnaise based sauces like aioli. And then I tried it once, and was hooked.

What is aioli?

What is aioli? Aioli comes from the Spanish region of Catalanuya where its known as ‘allioli’, which in Catalan basically translates to ‘ garlic oil ‘. Garlic and oil are actually the only two ingredients for the original aioli recipe. At the most seasoned with a dash of salt, nothing else.

How do you make a garlic aioli?

Real Aioli Making aioli is easy, and is arguably the greatest cold sauce of all time. It’s nothing more than olive oil emulsified into freshly crushed garlic, seasoned simply with salt and lemon. This is pure, fiery, intense garlic flavor like you may have never tasted. Jump to Nutrition Facts

  • 4 large cloves fresh garlic, peeled and sliced
  • ½ teaspoon kosher salt, or other course-grain salt
  • 1 teaspoon lemon juice, or more to taste
  • ½ cup light, extra-virgin olive oil
  • 1 teaspoon water to adjust texture, or more as needed
  1. Place garlic slices in a mortar with kosher salt. Mash with the pestle into a fine paste, 4 or 5 minutes. Mix in lemon juice.
  2. Add a teaspoon of olive oil; stir and mash until oil is incorporated. Add another teaspoon and mix in thoroughly. Continue incorporating olive oil, teaspoon by teaspoon, mashing and stirring until aioli thickens up. If the aioli gets thicker than you like, add a few drops of water. Chef John

Aioli is best eaten fresh, but should be okay for about 24 hours. Since this sauce has such a sharp, hot flavor from the garlic, you don’t want to use a really strongly flavored olive oil. We don’t want anything too peppery and bitter, which will clash with the garlic. Use something on the mild side, or cut with a neutral vegetable oil.
