Although lamb rogan josh is wonderfully delicious, it also requires more time to prepare and has more calories. In this recipe, I will be making it with chicken, My version of a rogan josh is quick and simple to make. Rogan Josh is a traditional lamb-based North Indian dish from the Kashmir region. This chicken curry has medium heat, but for those who want their curry milder, you can reduce the chilli and easily add more chilli, if you like it spicy.
Although the ingredient list appears lengthy, you will most likely have most ingredients in your pantry. The difficult aspect of the recipe is getting the spices, so don’t let that scare you off. If you enjoy cooking, I would recommend having a fully stocked spice cupboard. This chicken rogan josh recipe is not that spicy because there is not much chilli used. The whole Kashmiri chilli and powder have no heat on them. However, all those great spices give it a tremendous depth of flavour. For children who don’t mind a little heat, the chilli level is perfect.
Traditionally, rogan josh was served as the main entrée during Eid and other special occasions like weddings. However, nowadays it is one of the most widely consumed Indian curries, and you can get it from any restaurant serving Indian food. This curry is almost as quick to prepare as ordering takeout from your local Indian restaurant and I can guarantee you, that it will be tastier.
I love homemade curries a lot, especially because they’re flavourful, simple to make and feel like a better alternative to takeout. We regularly have curry nights at our house, and this simple chicken rogan josh is a favourite, even the kids enjoy it.
Serve this chicken rogan josh with a side of plain rice or naan bread. Do I have to use whole spices? Absolutely not. Sometimes what I do is put all the whole spices in a grinder and make my own spice mixture. However, in this recipe, I used both whole spices and ground spices. Also, keep in mind that whole spices tend to keep their flavour more than ground spices.

Replace the creamed coconut with a splash of vinegar, added near the end of cooking for a tangier, more savoury dish.The coconut can also be replaced with 150ml of yoghurt. This adds a tangy flavour, but still gives a lovely silkiness to the sauce. Mix the yoghurt with a small amount of gram flour to help stop it splitting and add it gradually, a spoonful at a time. Toast desiccated coconut in a dry pan until golden and use it to garnish the final dish.

Naan is to Indian food what fries are to burgers – they just go together. And like those fluffy spuds, this soft flatbread has little nutritional value. Most naan recipes call for Greek yogurt to give it that airy texture. But that’s more than offset by less healthy ingredients like white flour, sugar, and oil.
It’s red. It’s charred. It’s one of the most familiar Indian dishes. Chicken tandoori gets its name from tandoor, a thick clay or stone vessel it’s cooked in. You also can order tandoori fish and lamb, which are seared at high temperatures from fire, charcoal, or a gas flame. Much like grilling, all the flavor comes from the meat and marinade, not oils or other unneeded fats.
The name is exotic. But “pakoras” is just code for “fried vegetables.” Pieces of eggplant, potato, spinach, or cauliflower are dipped in batter, then take a quick bath in lots of hot oil. Skip ‘em for dine-in or delivery. You can make a healthier version at home with chickpea flour and baking instead of frying.
Indians eat chana masala at breakfast, lunch, dinner, or as a quick snack from food stalls in the local bazaar. Its main ingredient is chickpeas, aka garbanzo beans. The legume is loaded with folate, iron, fiber, and vitamin B. The tomato-and-onion sauce is blended with lots of garlic, ginger, chiles, and good-for-you spices.
We know what you’re thinking: Saag paneer is full of spinach. What’s unhealthy about that? The problem is the cubes of paneer, or Indian cheese. Some chefs up the fat factor by frying the dish in ghee, or clarified butter. Still others add cream and yogurt at the end for velvety texture. Lighten the dish at home and swap the paneer for tofu.
These portable pockets are the ultimate Indian street food snack. Samosas are filled with veggies – potatoes, onions, carrots, and peas. So what’s the worry? All the healthy stuff is folded into a carb-heavy pastry shell or wonton skin, then deep fried in bubbling fat.
This may not be the sexiest dish on the Indian buffet. You might skip right past it on your way to chicken tikka masala and basmati rice. But this potato-and-cauliflower combo gets high marks for taste and heart healthiness, especially with all that turmeric, ginger, garlic, and cumin in the mix.
It’s one of the most-ordered entrees at Indian joints. But like many Indian dishes that were originally low fat, the modern recipe for chicken tikka masala is anything but. An average portion has whopping 1,249 calories and 90.8 grams of fat. A lot of that comes from the ghee and heavy cream.
In northern India, this lentil flour bread is flame roasted. But in the U.S. and pretty much everywhere else, it’s deep fried. Resist the urge to devour them before your meal arrives. Or crunch your way through just a couple, maybe with a little mint chutney on top.

At home, where you can choose the cut of meat, go for a leg or loin, and load up on all those antioxidants, like ginger, garlic, tomato, and turmeric. Navratan means “nine gems” in Hindi. It’s fitting name for a dish filled with vegetables, nuts, and seeds.

Lamb Rogan Josh Some may regard Rogan Josh as the epitome of Indian Lamb curries. You would be hard bent not to find it as a regular offering at your local Indian takeaway or restaurant menu. It is the Butter Chicken of lamb dishes, for the Western world anyway! Obviously due to its popularity, the dish has gone through countless iterations and ingredients can vary slightly, depending on who you speak to.
- The origins of the dish are notably from Persia and it was introduced to the Mogul kings in the Kashmir region of India.
- Persian influenced dishes are favourably sweeter that the usual hot curries conjured up in the sub-continent’s many kitchens.
- Unlike many other dishes that get their sweetness from dried fruits and ultimately – the addition of sugar, Rogan Josh lends its sweet notes from the aromatic spices in its list of ingredients.
The name of the dish translates loosely to describe something “cooked in oil under intense heat”. I feel this is actually more of a misnomer than an explanation, as I am pretty sure most Indian curries are cooked in oil and under heat. Nevertheless, the name has stuck and is firmly imprinted onto palates worldwide, none more so than an old colleague of mine who practically kept the local Indian takeaway in business by his frequent ordering of this dish repeatedly.
I promised him about a year ago I would get him a good recipe for Rogan Josh, so I hope it’s not to late and he still reads my blog. Here is my version of Rogan Josh or better named Sweet and Spicy Lamb – Nah! Doesn’t have the same ring to it! Ingredients 1.2kg x Lamb, with bone, cut into rough chunks 1 tsp x Green Cardamom 2 pods x Black Cardamom 1 tsp x Black Peppercorns 1 tsp x Fennel Seeds 1 tsp x Cinnamon powder 3 whole x Dried Kashmiri Chillies (substitute 2 tsp x paprika) 2 tbsp x Ghee 2 x Bay Leaves 2 pods x Black Cardamom 1 stick x Cinnamon 4 x Onions, finely chopped 4 cloves x Garlic, crushed 1 inch piece x Ginger, grated 2 tsp x Garam Masala 2 tsp x Sweet Paprika 1 tbsp x Salt 1 cup x Natural Yoghurt, extra half cup if required 1 cup x Water 1 bunch, Coriander leaves Directions Combine the seeds of the green and black cardamom with the peppercorns, fennel seed, cinnamon, and dry chillies in a spice grinder or mortar and pestle Grind to a fine powder and rub over the lamb pieces, allow to stand for at least an hour In a wide frypan or wok heat the ghee then add the bay leaf, cardamom and cinnamon, fry for 30 seconds Add the onions and fry, stirring frequently, until they are dark and caramelised – do not burn! Add the garlic and ginger and fry for another 2 minutes then add the paprika and salt If the mixture starts to dry add a little water to retain a little moisture as you fry Place the lamb into the wok, folding the curry mixture through it Pour in the yoghurt a little at a time, incorporating it gradually Add a little water if required to just cover the lamb, stir to combine then bring to the boil This is now the time to transfer the lamb and spices to a heavy pot to slow cook it in Turn heat down and simmer covered for 1 hour and 15 minutes, stirring frequently to prevent the bottom catching In the final 5 minutes of cooking add the coriander leaves and stir through.
Serve with piping hot naan bread or a bed of basmati rice. “As mentioned before there are a probably hundred ways to make Rogan Josh and who’s to know the correct one – possibly a native! This recipe follows the traditional spice and yoghurt ingredients typical of Persian cuisine.

What’s better Bhuna or Rogan Josh?
Dopiaza, Rogan Josh, Bhuna, Balti, Karahi and Biryani. – Dopiaza is big on onions and so not recommended if you’re likely to be snuggling up with someone later. Rogan Josh and Bhuna are so similar in their DNA they could be brother and sister – both go big on tomatoes, but the Bhuna is drier.
Balti is the dish you see served in beautiful stainless steel bowls. It usually comes with naan bread, which in many cases doubles as your cutlery.
