What is the secret to restaurant fried rice?

The Secret to Perfect Takeout-Style Fried Rice – There’s only one secret to making delicious fried rice that tastes just like it came from your favourite Chinese restaurant: using leftover rice! Sure, you can totally use freshly-cooked rice, but you’ll get much better results if you start with day-old rice.

  1. That’s because fresh cooked rice is still very soft, so all that stirring will turn it into a mushy, clumpy mess.
  2. Cooling the rice off overnight allows it to dry off and seal the outer layer, so that it doesn’t all clump together during the cooking process.
  3. Thankfully, it’s not like leftover cooked rice is all that hard to come by.

I’ve even been known to deliberately make an extra cup of rice just so I have an excuse to make fried rice the next day.

What do you call to Thai fried rice?

Thai Fried Rice vs Chinese Fried Rice – Khao phat (pronounced COW-pat ), is a classic dish in Thai cuisine whose name literally translates to ‘stir-fried rice’. It is different from Chinese fried rice in that it is prepared with jasmine rice rather than regular long grain rice.

  • Thai fried rice typically contains similar meats to Chinese fried rice, like chicken and shrimp.
  • However, you won’t find as many vegetables in Thai fried rice as in its Chinese cousin.
  • Thai fried rice includes only the aromatic onion, garlic, and peppers, with thinly sliced tomatoes sometimes being added to the mix.

Like Chinese fried rice, Thai fried rice does contain scrambled egg, but the egg is mixed in with the rice while still slightly runny, coating the rice grains and creating an incredibly creamy dish.

Why is vinegar added to fried rice?

Ingredients & substitutes – Rice : Use any long grain or medium grain thin rice. Any rice labelled as long grain, basmati or jasmine work well to make fried rice. Avoid using short fat grains as they have more starch content and likely to turn sticky after cooking.

  • Sona masuri rice also works well.
  • Vegetables : I personally prefer to use carrots, French beans, bell peppers, green onions & green peas for this basic recipe.
  • Yes peas add some protein to the dish so it is always there in my kids’ fried rice.
  • A lot of times I make this fried rice with a single veggie like mushrooms, cabbage, zucchini and sometimes broccoli.

You may use the search bar on top to check some of these versions that I already posted on the blog. Soya sauce is also known as soy sauce. Choose naturally brewed or organic soya sauce. Naturally brewed soya sauce is fermented for several months/ years so it is much more flavorful than the regular one which is treated chemically.

  1. For a gluten-free option substitute it with the same amount of Tamari.
  2. Vinegar is one of the less used ingredient in a fried rice.
  3. You will not find vinegar in most Chinese fried rice recipes.
  4. But it really adds a slight tang to the rice and enhances the taste.
  5. Rice vinegar is used in Chinese cooking especially in stir fry, salad dressings etc.

You may skip this easily from the recipe or use apple cider. Avoid white vinegar as it is too acidic in taste. If using apple cider, use it in combination with ½ teaspoon sugar as it recreates the same sweet flavour & taste of rice vinegar.

What makes restaurant fried rice taste good?

The secret is ‘wok hei’ – Thai Fried Rice Resepti Jose Luis Carrascosa/Shutterstock So just what is it about these restaurants that makes their food so much more delicious than the fried rice we can prepare at home? The answer: high heat, expert tosses, and something known as ‘ wok hei,’ As J. Kenji López-Alt writes for Serious Eats, expert cooking with a wok (and the gas range it requires) is one of the main reasons that fried rice from a Chinese restaurant tastes so much better than what you can make at home.

He says that using high, direct heat helps facilitate an aroma, flavor, and crispy texture that can only come from ‘wok hei,’ which describes the signature tastes and smells from cooking with a wok. López-Alt writes in the New York Times that much of this flavor comes from the Maillard reaction caused by the specialized gas range and wok, and from the way the food is tossed by the chef.

As the food rises it comes in contact with the steam rising from the food which is then vaporized, along with the fats, as the food comes into contact with the hot wok once again. This tossing is so precise when done by seasoned chefs that the physics of tossing fried rice was studied by researchers at the Georgia Institute of Technology,

Why won’t my fried rice get crispy?

Recipe Tips –

I use Basmati rice in this recipe. I find that I prefer it with longer grain rice, but you can you use any rice you like. Use brown rice to add more of a nutty flavor. Be sure to fry the rice in two or more batches. If you add too much at once, it won’t get the crispy texture we’re going for. While grape seed oil is my first choice, there are other oils you can use. Here’s a great article on the best oils to use for frying.

Why is Thai rice so good?

Thai Rice – For Life ! – Posted by on December 9, 2015 Shopping for rice these days can be as complicated as shopping for clothes: there are so many different types and colors available, it’s hard to know what to choose. But if you’ve ever sampled the various types of rice on the market-from Chinese short grain to Indian Basmati, Italian Arborio (used for “Risotto”), or even the Native North American Wild Rice-you would have to agree that Thai Jasmine Rice is one of the best-tasting, not to mention one of the most nutritional of all types of rice.

  • Thai rice is often sold in our local grocery stores or Asian stores as “Fragrant Rice”, “Jasmine Rice”, or “Scented Rice”.
  • In Thailand, Thai rice is known as “Kao Hom Mali” (Jasmine-scented Rice), because of its naturally fragrant properties.
  • With jasmine rice’s good-taste and high-quality, it’s no wonder that Thailand is the number one rice exporter in the world.

In fact, if you were to venture via river boat out of Bangkok toward the Central Plains, you would see nothing but rice paddies for miles and miles, and the vibrant bright green of rice shoots growing. In Thailand there is a well-known saying: “A meal without rice leaves the stomach empty”.

  • It’s hard for those of us in the West to understand how important rice is to Thai people-even more important than bread or potatoes are to us.
  • For the average Thai cook, rice comes first before any other dish or food type, and every Thai household will have a pot of warm steamed rice available to eat for breakfast, lunch, dinner, and even in between.

thai food : jasmine rice thai recipe : steamed jasmine rice with panaeng curry One advantageous property of Thai rice over other types is its ability to retain its moisture content, nutrition, and taste long after it has been cooked. Even after several days in the refrigerator, Thai rice is still moist and flavorful, making it an excellent choice for dishes that call for “day-old” rice (or rice that is several days old), such as fried rice or rice soup.

  • It also makes for good-tasting, everyday leftovers.
  • For those who prefer an even healthier variety of rice, another option is “Thai Brown Rice” or “Thai Whole-grain Rice”.
  • This is the same jasmine-scented rice, except that the bran covering has been left on the rice kernel, giving it extra fiber plus valuable vitamins that are normally lost in the milling process.

Sometimes this type of rice is also sold under the name, “Cargo Rice”. Another popular type of Thai rice is “Thai Glutinous Rice”, also known as “Thai Sweet Rice”. Mostly used for desserts, this type of rice is sticky and as elastic as wheat gluten (hence the name “glutinous”).

Before cooking this type of rice, be sure to soak it for several hours or overnight, otherwise the hard outer shell of the rice kernel may not soften and you’ll be left with crunchy bits of rice instead of that lovely soft and sticky texture that has made Thai desserts famous around the world. Thai Rice: Cooking Tips : By far the easiest way to cook Thai rice is with a rice cooker.

Just follow the instructions that come with the cooker to make perfect rice every time. Or go by the ratio of 2 cups water to every 1 cup of rice. Then simply turn the rice cooker on and wait until the rice is done. If cooking rice in a pot on the stove: You will need a deep pot with a tight-fitting lid.

  1. First, measure 2 cups of rice into the pot (this will feed 2-4 people).
  2. Add 3 + 1/2 cups water.
  3. Adding a pinch of salt is optional.
  4. Bring rice-water to a boil (stirring occasionally to loosen grains from the bottom of the pot).
  5. Once rice-water has started to bubble, partially-cover with the lid (leaving just enough room for steam to escape) and reduce heat to medium-low.

There is no more need for stirring. Allow the rice to cook for about 20 minutes, or until all the water is gone. Turn off the heat, but leave the pot on the burner and cover completely with the lid. Allow to sit for at least 5 minutes or more (until the rest of your Thai dishes are ready).

Then fluff with a fork, and serve. thai food : sticky rice thai recipe : sticky rice with grilled pork To cook brown rice, double the amount of water you would normally use for white rice (also double the cooking time). Then follow the same instructions (as written above) for white rice. To reheat day-old rice (or rice that is several days old), place in a covered glass container and heat in the oven for 10-20 minutes (at 350-375 degrees).

You can also reheat using a microwave; however, reheating in the oven preserves the rice’s valuable nutrients. If the rice is more than 2 days old, add 2 Tbsp. water and stir before reheating in order to sufficiently soften it. As mentioned above, to cook Thai Glutinous Rice, soak the rice for several hours first, then cook in a rice cooker, or boil the same way you same way would for regular white rice at the ratio of 2:1 (2 cups water for 1 cup rice).

  • Be sure to leave the lid on tight for at least 10 minutes after all the water has disappeared (this will make it soft and sticky).
  • If you want to “mold” the rice for special desserts or snacks, place the pot (covered) in the refrigerator for an hour or two, or until cold-this will make the rice even stickier and more pliable.

Common spices in Thai food – Many of Thailand’s most popular dishes contain one, if not several ingredients that make them spicy. This stinging, tingling sensation is most often caused by a combination of chili peppers, ginger, garlic, and peppercorn.

Chili peppers are popular around the world. Peppers commonly used in Thai cooking include: Bird’s eye chili (prik kee noo), Spur chili (prik chee fah), Karen chili (prik kariang), Serrano chili (prik kee noo kaset), and sweet pepper (prik yuak). Ginger and garlic create a burning sensation in the sinuses, especially if eaten raw.

What is the difference between Thai fried rice and basil fried rice?

What is Thai Basil? – Thai basil is a type of basil native to Southeast Asia. The main difference between Thai basil and Italian sweet basil is in the fragrance and taste. Thai basil has a black licorice-like fragrance and flavor that becomes very aromatic when added into the dish.

  1. Another distinguishable difference is the color of the stem: Thai basil has a purple stem, while sweet Italian basil has a green stem.
  2. One thing you have to understand is what makes Thai fried rice different than Chinese fried rice.
  3. The difference is in the seasoning.
  4. While Chinese fried rice relies heavily on soy sauce, Thai fried rice uses fish sauce to season the rice.

This Thai basil fried rice is seasoned with a mixture of soy sauce and oyster sauce to bring out the full flavor of the aromatic Thai basil herb. It’s slightly spicy due to the addition of fresh chili, which is common in Thai fried rice, but you can omit the chili if you’d rather enjoy it as a mild fried rice. To add a protein to this basil fried rice, I found that a shrimp and egg combination is the best for my taste. But chicken and beef (or ground beef) are also equally tasty in the same recipe if you are not a shrimp lover. If you have abundant Thai basil, use this easy recipe to replicate this authentic Thai fried rice with basil in your own kitchen.
