What should it be like and what might I be doing wrong?! The proportions were 4 eggs to 350ml milk and 250g flour. in a stoneware dish approx 20x30cm. The batter in a toad in the hole should rise up but will be airy and crisp rather than spongy or cakey.The flour should be plain (all-purpose) flour and not self-raising.However it is most likely that the batter isn’t quite cooking properly due to the dish.

Stoneware tends to heat up very slowly and doesn’t give the instant hit of heat that the batter needs to help it to rise properly. In Nigella’s recipes she tends to use a metal roasting pan and heats this on the hob before adding the batter. You should not heat the stoneware dish directly on the hob as there is a risk it will crack, however you could try putting the dish with a little oil in it in the oven when you turn it on and then letting them heat up with the oven.

How do you know when toad in the hole is done?

Method –

STEP 1 Make the batter: Heat oven to 200C/fan 180C/gas 7. Tip 210g plain flour into a large mixing bowl and stir in 1 tsp English mustard powder with a good pinch of salt. Now add a bit more milk and continue stirring until all the milk and flour has been mixed together. STEP 2 The batter is ready: You should now have a smooth, lump-free batter that is the consistency of double cream. Stir in the leaves from 4 thyme sprigs, then tip the batter back into the jug you measured your milk in, for easier pouring later on. Use scissors to snip the links between 8 plain pork sausages, then drop them into a 20 x 30cm roasting tin, Add 1 tbsp sunflower oil, tossing the sausages in it to thoroughly coat the base of the tin, then roast in the oven for 15 mins. STEP 3 Cook the batter: Take the hot tray from the oven, then quickly pour in the batter – it should sizzle and bubble a little when it first hits the hot fat. Put it back into the oven, then bake for 40 mins until the batter is cooked through, well risen and crisp. Check it after 40 minutes, cover loosely with foil if it is browning too much. If you poke the tip of a knife into the batter in the middle of the tray it should be set, not sticky or runny. STEP 4 Make the gravy: Soften 2 sliced onions with 1 tbsp sunflower oil in a large non-stick frying pan for about 20 mins, stirring often, until they are golden brown. Sprinkle in 1 tsp soft brown sugar for the final 5 mins. Add a spoonful of plain flour, then cook, constantly stirring, for 2 mins, so it coats the onions and there is no dry flour left. Gradually pour in 500ml beef stock, stirring well to make a smooth sauce. Bubble for 4-5 mins to thicken, then season. Cut the toad-in-the-hole into large wedges and serve with the gravy spooned over.

How do you stop toad in the hole sticking? – Washing up after dinner is my least favourite time of the day. It’s even worse when you’ve got baked-on food that just won’t budge. But before you even worry about cleaning it off, trying to serve up a traditional toad in the hole, without the batter sticking to the bottom or the sides, can be a nightmare if you don’t get the recipe right.

You don’t need to worry about greasing the dish though. Making sure your toad in the hole doesn’t stick is all about getting the heat right (just like making the perfect Yorkshire puddings ). You need to get the oil in your dish smoking hot. Don’t use olive oil; you want to use a cheaper sunflower oil that smokes when heated.

This means when the batter goes into the dish, it will already start to cook before it reaches the oven. Also, once it’s finished cooking, remove your toad in the hold from the oven and leave for a few minutes to cool down before you start cutting it into portions.

Eugenol (e.g., Croaked®) – this chemical is applied as a spray onto the toad’s skin (the back is easy to access) which is then absorbed, causing the toad to become sedated, then unconscious (within a few minutes) and then dead relatively quickly. The trial results indicate that there is no skin irritation, pain, distress or internal bleeding.

Gloves must always be worn when handling toads. Toads must be confirmed dead before disposal. Another method, which is listed as conditionally acceptable is:

Hopstop® – this is an aerosol spray that has been specifically developed for killing cane toads and is commercially available for this purpose. When applied in sufficient quantity it appears to be effective and easy to use but some toads show signs of pain and distress after its application. Although Hopstop® contains the same active ingredient found in Dettol (which causes extreme skin irritation and pain), it also contains a chemical which reduces but may not eliminate this irritation. Dettol is considered inhumane and should not be used. Information on where to purchase Hopstop® is provided through the manufacturer’s website, It is very important that each toad is treated with sufficient spray to ensure death. The SOP recommends that after spraying, the toad is closely observed and once movement ceases, a second spray must be applied. Two hours after spraying, toads must be confirmed dead before disposal.

The following methods MUST ONLY be used by trained and competent operators:

  • Stunning followed by decapitation can also be used to kill individual cane toads, but this method is only suitable for use by confident and skilled operators with the correct equipment and technique. This method must not be used unless those involved have received appropriate training, as ineffective stunning or unskilled decapitation will result in an inhumane death.
  • Prolonged exposure to carbon dioxide is the most commonly used method for killing multiple cane toads at a time. This method must only be used by trained operators using appropriate equipment. Death must be confirmed prior to disposal.

Professor Rick Shine from the University of Sydney said the toads quietly slipped into unconsciousness as they were transformed into toadsicles, and the toad’s brains did not register any evidence of pain during the entire process.”What we saw was that the toad’s brains just switched off,” he said.”By the time they went into the freezer there was almost nothing happening and it slowly went down.”The difficulty is of course, you can’t ask a cane toad if something hurts.

Add some of the sausage drippings to the batter for flavor and then grease the baking dish with shortening. When you add the batter to the baking dish, the shortening will not be displaced by the batter and help prevent the sticking.
